I'm sure by now you see a pattern with my food featured here on Tasty Thursday (previously Tasty Tuesday).
I eat Paleo style, Hubby eats Primal, my little girl is gluten free and the boys eat everything.
I also have allergies that most can eat with a paleo lifestyle, sadly, I am allergic too Shellfish & Dairy (casein), I am intolerant (waiting to test) to Grapes, Coconut, Gluten.
Occasionally I "cheat" with rice/corn/beans/potatoes. Those are cheats for me verses ice cream or candy or soda.
For years I didn't eat hamburgers, seriously I went about 8 years without a burger.
Today I'm posting a favorite of mine and my husbands.
Bunless Burger
Mine is a spicy burger-
pickled jalapenos, sauteed bell peppers, onions, mushrooms, bacon, tomato, pickles placed inside two large green leaf or romaine pieces
I stack the lettuce one to the left and one to the right and build the burger on one end, fold lettuce over place toothpicks and slice in half.
Even my daughter eats hers this way, with pickle only, little stinker took out the bacon :P

Tasty Thursday~ Fried Green Tomatoes
With a twist that is.
Topped with bacon, egg, salsa, YUM!
Paleo style too :)
(grain free, gluten free, dairy free, coconut free)
Slice your green tomatoes into your needed count
one bowl has almond meal
one bowl has scrambled seasoned eggs
Lightly flour, then dip, then flour
I used EVOliveOil and browned up the slices.
Once cooked through on both sides I plated with bacon, pouched egg, fresh salsa

These are so fun for the kids.
Quick grab 'n go in the mornings.

Cook up your favorite sausage links
Pictured below is all three steps:
Back row is showing 1 spoon batter
Middle row I add sausage

Tasty Thursday~ Pumpkin Pancakes
Paleo style
(Grain free, gluten free, dairy free, coconut free)
In mixing bowl mix together
1 Can Pumpkin puree
1/3 C Almond flour
1/2 tsp vanilla extract
1/2 tsp cinnamon
4 eggs
butter or coconut oil for pan
I used EV Olive Oil due to my allergies
Brown up one side then flip, you can see the color change of the pumpkin as it cooks, the first may be a tester as mine always seems to break, I try to turn to soon, these need to cook on medium slowly.
These aren't to big, just a spoon full of mixture.

Tasty Tuesday is now Tasty Thursday~ Asian inspired
* changing to Thursdays as I love to link up to a couple of linky parties and don't always want the linked posts to be food related. :)
Paleo Asian inspired that is.
Stir fry veggies, pork tenderloin, cauli/broccoli rice
Sugar snap peas, carrots, mushrooms, bell peppers, zucchini, squash, onion
sauteed with olive oil, garlic powder, salt, pepper & sesame oil if you'd like
in the back ground you can see riced cauliflower & broccoli cooked up with same seasonings just a tad of water too
2 pork tenderloins, one with a black pepper rub and the other with sesame oil, garlic powder, coconut aminos or tamari.
Totally hits the spot when I want stir fry or Chinese buffet (which sadly is a death trap for me even if I took the family out the possible cross contamination of shellfish alone is too much of a risk)

Tasty Tuesday~ Infused Olive Oil
This past holiday season I gifted these Infused Olive Oils.
They are pretty easy & quick to work up.
If gifting I prep them about a week prior so they can infuse and marry and be ready to use the day of gifting.
You will need:
Extra Virgin Olive Oil
empty glass jars (I recycle syrup jars)
jar lids or corks
whole peppercorn
fresh garlic
fresh rosemary
pot
funnel
I measure oil in jar stopping at the bottom of funnel- I did this three times for three jars worth.
I then pour all oil in pot and cook on low just until it ripples then I turn it off.
As oil is heating I add the peppercorns (10-12), garlic (2-4 cloves sliced in half) & rosemary (2-3 sprigs) to each jar.
I slowly fill jars with oil again, some bubbling may occur, let oil sit and top off the jars in a few minutes if needed.
Once cooled to room temp, cork or screw on jar lid. Store in cabinet for about a week.
If using at home you can refill with oil one more time before having to discard the herbs, just fill when oil gets to garlic and store for a week again.
We make these for ourselves often. We top off a salad with it, fry an egg in it, sprinkle some onto tomatoes & cucumbers, even dribble some onto grilled chicken. Options are endless.

Tasty Tuesday- Paleo Pastelon
Well not a clean paleo version......
I did modify the recipe
My modifications were~
used only 1lb beef, 6 eggs, 8x8 pan.
no wine, I subbed olive oil for coconut oil
added chopped green olives, oregano, turmeric, paprika.
I layered plantain,beef,plantain,beef,plantain.
I did not precook my bottom layer of eggs.
I only had to bake for 30mins, if I would have gone longer it would have been burnt.
We served with fresh chimichurro sauce on top and side was garlic green beans.
We ate half and got 4 squares from the other half for lunches this week.
It was delicious!

Take out
Sesame Oil, Soy Sauce, Garlic Powder, Sesame Seeds
On Med High heat your pan, add in Sesame Oil and Soy Sauce,
no measuring, just go around the pan (write a Z or M or whatever)
Buy the pre sliced super thin beef (usually theres 3 long wide pieces) for about $5,
stack them and slice them into strips
slice up a green bell pepper
slice up a 1/4 onion
Add to hot pan
sprinkle with garlic powder and sesame seeds
cook until done
This is how the kids ate it, for myself it would be with only rice
* to be gluten free please check that you have the right soy sauce

Tasty Tuesday
Cooking on the grill tonight.
NY steak and veggies.
Seriously 20 min is all this took.
Turn on grill, med-low
Season steaks as you please, I used Montreal steak seasoning mix
Chop veggies, sprinkle with lemon juice, season to taste, I did fresh parsley salt pepper red pepper flakes. Toss and place on tinfoil, make a makeshift bowl/pan.
Take veggies and steaks to grill, place veggie bowl on top rack and steak on bottom, I like medium well so I set the timer for 4 1/2 mins, flip steaks set again 4 1/2 mins
Pull steaks off to sit and leave veggies on, set timer to 5 mins, pull off veggie bowl.
Dinner is done!
Now for the kids I did fry up French fries while cooking the meat and veggies, still took 20 mins.

Tasty Tuesday
Cooking for one tonight.
Chicken and veggies is what I'm having.
So simple any level of cook can do this.
In a small pan add a dash of your favorite cooking oil, turn stove on to medium.
Salt and pepper a boneless skinless chicken breast, place in warm pan.
Wash and chop veggies on hand, here I used 3 mushrooms, 1/2 a zucchini, 1/2 an eggplant.
Flip chicken breast and add veggies to pan, salt and pepper to taste, cover.
(I failed to watch the clock)
In a few minutes check chicken and veggies, if you need to slice into chicken to check its doneness, continue for a few more minutes if needed.
That's it, dinner for one.
